In today’s competitive food sauce marketplace, it’s a rarity to find an individual making and marketing the product. Most bottled sauces come from companies operating under corporate umbrellas Ann Kline of Yachats is an exception. She’s the owner and man- ufacturer of Mad Annie’s Caribbean Ginger Sauce Cooked and prepared in her own kitchen, licensed by the Oregon Department of Agriculture as a “Food Processing Establishment,” she makes about 15 gallons at a time, package it, and then it’s off to market.

HISTORY OF MAD ANNIE'S GINGER SAUCE
Her entry into the commercial sauce market came after she had spent time living on San Pedro, an island off the coast of Belize in Central America. After returning to Oregon, she was invited to a potluck and cooked up her own version of a sauce she had tasted on San Pedro. It turned into such a hit that friends kept asking her to make them some.

“It was a snowball effect.” she said. “I just kept getting requests for it. At the time. I was running a T-shirt shop but with the sauce taking off. I phased the shop out.”

“The sauce is really the result of experimentation, some of this, some of that, until I found the right combinations,” she add.

MARKETING THROUGH DEMOS
Another way Kline markets the sauce is through live “demos,” where she cooks and gives out free samples. “ I always sell a lot of bottles at these, and they are fun to do,” she said. “I enjoy meeting the customers face to face.”

She has "demos" scheduled in the near future - May 2 and 3 at the Crafts on the Coast Spring Festival, and May 9 at Clark's Market in Yachats, from noon to 2 pm.
